A simple, rustic dish inspired by Mediterranean pantry cooking.

- Sardines in Olive Oil
- Cooked white beans (cannellini or similar)
- Red onion
- Fresh parsley
- Black pepper
- Warm the white beans gently in a pan with a little olive oil from the sardine tin.
- Add finely sliced red onion and heat briefly until softened.
- Remove from heat and gently fold in the sardines, keeping them in large pieces.
- Season with black pepper and finish with chopped parsley.
Serve warm as a light meal or alongside grilled vegetables and crusty bread.
