Cretan biscuits baked with olive oil instead of butter, spiced with cinnamon and clove. Drier and cleaner than a buttery biscuit, which is why they sit so well beside coffee.
We love that they are made with olive oil rather than butter. It gives a drier, cleaner crumb, and it is the reason they go so well with coffee instead of competing with it.
Baked on Crete to a traditional recipe, using extra virgin olive oil in place of butter and a little wine in the dough, as the island’s bakers have long done.
We serve them with coffee in the morning and with mountain tea in the evening. They keep their crispness for days.
