A balsamic vinegar of Modena aged ten years in wood, then given the aroma of black truffle. It is thick, sweet and sour at once, with a woody finish.
Ten years in barrel is what makes it pour slowly and taste of cooked grape rather than of vinegar. The truffle arrives late, on the finish, instead of covering everything.
Artisan de la Truffe is a Paris house that works only with truffle. Each preparation is made by the specialist producer best placed for it, which is why the countries change from one jar to the next. This one is aged in Modena, in Italy.
A few drops on a beef carpaccio, on parmesan shavings, or on strawberries. We also use it to deglaze a pan at the very end, off the heat.
