Grown and pressed on Crete, where the olive harvest is early and the pressing follows quickly. Cold pressing keeps the acidity low and the aromatics intact, without filtration stripping the character out.
We use it for everything — the pan, the salad bowl, the last drizzle before serving. It is the bottle we refill first.
