Fleur de sel – Natural sea flakes 150g

We love the texture more than the salinity. The flakes hold their shape on the tongue for a moment before dissolving, which is the whole reason to finish a dish with salt rather than season it early.

Hand-harvested from the surface of salt pans across nine Greek islands, then simply dried. Nothing is added and nothing is refined out.

We use it at the end, never in the pan — on tomatoes, grilled fish, roast potatoes, and on chocolate or caramel where a little salt sharpens the sweetness.
