Fresh water
Honey, optional
Lemon, optional

Method

Bring the water to the boil, then take it off the heat for a moment.
Add a generous pinch of the dried herb — stems included.
Cover and leave to infuse for five to seven minutes.
Strain into cups and sweeten with honey if you like.

To enjoy

Drink hot in the evening, or leave to cool and serve over ice in summer.
