Baked Kritharaki with Tomato
The dish that made orzo famous

- Chopped tomatoes
- Stock
- Extra virgin olive oil
- Onion
- Grated hard cheese
- Soften the onion in olive oil in an oven dish.
- Add the tomatoes and cook for a few minutes.
- Stir in the kritharaki and pour over the hot stock — roughly twice its volume.
- Bake until the liquid is absorbed, then finish with grated cheese.
Serve straight from the dish, while it is still bubbling at the edges.
