A pale, gently sweet balsamic. It seasons white fish, young cheese and delicate vegetables properly, and leaves the plate looking untouched.
We love it for everything a dark balsamic would ruin. White fish, young cheeses, pale vegetables — it seasons them properly and leaves the plate looking untouched.
Produced in Greece from wine vinegar and concentrated grape must, balanced to a lower, gentler acidity than a standard wine vinegar.
We use it in vinaigrettes, over ripe fruit and burrata, and to deglaze a pan when a dark vinegar would be too heavy.
