03How We Use It

Boil the pasta in well-salted water and keep half a cup of the water back. Warm the sauce, loosen it with that water until it turns glossy, toss the pasta through it, then take the pan off the heat and add the chilli oil. Salt and pepper are enough; parmesan, basil or lemon zest if you have them.

Spicy Tomato Pasta

Ingredients

  • Pasta from the bundle
  • Tomato sauce from the bundle
  • Chilli oil from the bundle
  • Salt for the pasta water
  • Black pepper
  • 1 small garlic clove, finely sliced (optional)
  • 1 tbsp butter or olive oil (optional)
  • To finish: parmesan, basil or lemon zest

Method

  1. Cook the pasta in well-salted water until just al dente. Keep half a cup of the water back, then drain.
  2. Warm the tomato sauce in a pan over medium heat. If you are using garlic, soften it first in butter or oil for 30 to 45 seconds.
  3. Add a splash of the reserved pasta water and stir until the sauce turns glossy.
  4. Add the pasta and toss for 30 to 60 seconds, loosening with more water if needed.
  5. Take the pan off the heat, drizzle the chilli oil to taste and toss again.

To enjoy
Serve straight away in warm bowls, with a last thread of chilli oil on top. Salt and pepper are enough on their own; the chilli oil does the work.
