A single-origin milk chocolate made with Haitian cocoa from Grand'Anse. At 65% cocoa it is far darker in taste than its pale colour suggests.
A milk chocolate at 65% is rare, and it is the reason this bar tastes of fruit rather than of sugar. There is a saline note on the finish that we did not expect the first time.
Bonnat has been roasting and grinding its own beans in Voiron, in the French Alps, since 1884. It is one of the oldest bean-to-bar houses still working the same way. The beans come from the Grand'Anse region of Haiti.
We serve it to people who say they only eat dark chocolate. It is also the bar we keep for a late evening, when a 75% would be too much.
