A mild Dijon mustard softened with flower honey and lifted with black truffle.
The honey takes the heat out of the mustard, which leaves room for the truffle to be heard. It is mild enough to eat by the spoonful, which is not something we say often about mustard.

On a roast chicken, in a vinaigrette, or whisked into mayonnaise. We also use it under the crust of a savoury tart.
