A dark chocolate bar with a praliné centre of almond and hazelnut, finished with pistachio and a trace of smoked salt.
The smoked salt is present at a fraction of a percent and that is exactly the right amount — you notice it as a change in the praliné, not as salt. The shell is a 75%, which keeps the filling from turning sweet.
Patrice Chapon roasts his beans and makes his bars in Chelles, east of Paris. He worked as an ice-cream maker for the British royal household before opening his own chocolate house.
We cut it into short pieces and pass it around after a meal. It does not need coffee to make sense.
