A mild Dijon mustard softened with flower honey and lifted with black truffle.
The honey takes the heat out of the mustard, which leaves room for the truffle to be heard. It is mild enough to eat by the spoonful, which is not something we say often about mustard.
Balme prepares its truffle condiments in Larressore, a village in the French Basque Country, with vegetables grown locally.
On a roast chicken, in a vinaigrette, or whisked into mayonnaise. We also use it under the crust of a savoury tart.
